Curried Orange Chicken

2 tbsp. butter, softened
2 tbsp. honey
Grated peel of 1/2 orange
1 1/2 tsp. curry powder
1 broiler-fryer chicken, cut into serving pieces
3/4 c. fresh squeezed orange juice
2 oranges, peeled & cut into cartwheels
1 tbsp. cornstarch

Combine honey, butter and curry powder.
Arrange chicken, skin side down, in 9 x 13 inch baking pan.
Spread honey and butter mixture over chicken pieces.
Add 1/2 cup orange juice.
Cover with foil and bake at 400 degrees for 40 minutes.
Uncover, turn chicken over and bake uncovered for 20 minutes, or until chicken is tender.
Arrange orange slices on chicken and bake until orange slices are heated through. Remove chicken to serving platter to keep warm. To make sauce gradually blend remaining orange juice into cornstarch and add to pan drippings, stirring until thickened.
Serve over chicken and orange slices.
