- 4 diced chicken thighs
- 1 can diced tomatoes
- 1 diced medium onion
- 1 diced bell pepper
- 1 cup canned chicken broth (eyeball it mid way up the chicken is good
- 1 1/2 tsp minced garlic
- 2 tsp Paprika
- 1 cup white rice
Instructions
Place everything (but the rice) in a 4-quart or larger crockpot. Cover and cook on low setting for 5 hours.
Add rice; cook, covered, about 20ish minutes.
Yeilds about 4 servings at 6pts per serving & it is OMG yummy!!!
