Just Like Momma Makes It Potato Soup!


Ingredients: 
5 pounds potatoes, peeled & diced
Chicken Stock - enough to just cover the potatoes in the pot
1 tsp salt (adjust to taste)
1 tsp pepper (adjust to taste)
1 tsp garlic (adjust to taste)
1 pound Neese's Country Sausage - mild
1/2 C heavy cream

Directions:
  1. Peel & dice potatoes, place in soup pot.
  2. Add salt & pepper.
  3. Cover with chicken stock. 
  4. Turn on high & cook until potatoes are fork soft.
  5. Using a potato masher, mash most of the potatoes (leave some chunks cause that makes it yummy!)
  6. Fry sausage.
  7. Add sausage, garlic & cream to soup and stir to combine.
  8. Taste! May need to add more salt, pepper or garlic.
  9. Serve while hot!!!!!



Spa Pizza

DOUGH:

2 1/4 c. unbleached white flour
1 c. whole wheat flour
1 tsp. salt
1 tsp. olive oil
1 tsp. honey
2 pkgs. Rapid Rise yeast
1 c. hot water
Pam spray

TOPPING:

1 1/2 c. pizza sauce
1 c. grated skim Mozzarella
Sliced vegetables as desired (broccoli, mushrooms, onions, zucchini, etc.)

Mix all dry ingredients. Add water; mix well. Knead gently and cover for 10 minutes. Spray cookie sheet with Pam. Roll out dough onto sheet and let rise 20 minutes.
Top with pizza sauce and Mozzarella. Top with sliced vegetables as desired. Bake at 400 to 425 degrees for 20 minutes until cheese is melted.

Garlic Potato Pie

Ingredients:
1 lb of scrubbed boiling potatoes.
6 cloves fresh garlic, sliced finely.
1 cup of milk.
¼ cup of breadcrumbs.
3 tablespoons of grated parmesan cheese.
3 tablespoons of butter.

Preparation Instructions:
Preheat your oven to 380°F (180°C).

Slice potatoes thinly.
Butter a 9-inch pie plate.
Arrange a layer of potatoes, garlic slices, parmesan and slices of butter.
Repeat using the rest of the ingredients (other than the milk), saving some of the cheese and the butter.
Heat the milk and pour over top of the potatoes.
Top with bread crumbs and remaining cheese and butter.
Bake for 1 hour, until the potatoes are tender and top has turned golden brown.

Potato croquettes

Mashed potato mixed with meat and onion, breaded and deep-fried. Mmmmm, healthy. (snark)

What you'll need:

1 average-sized (one pound) baking potato
1/4 pound of ground beef
Half an onion
1 egg
Flour
Panko (breadcrumbs for deep-frying)
1/2 tsp salt
Pepper, salt, other seasonings to taste
Vegetable oil for frying
Lots of paper towels

Make mashed potatoes: Peel the spud, cut it into chunks less than an inch thick, then boil those until soft enough to pierce the center easily with a fork. Drain, dump them into a bowl, then mush 'em up with a potato masher or reasonable facsimile.

Mince the onion, then sautee the mincings in a lightly oiled pan. When the onions start turning translucent add the beef and stir-fry it until the beef is browned. Drain the fat, then mix the beef & onions into the potato. Season with salt, pepper, or whatever else you like. While this is cooling set out a bowl of flour, a second bowl with one beaten egg, a third bowl with panko, and one large plate covered with a few layers of paper towel. Heat up a pan of oil to 350 degrees F; a little over 1/4" depth of oil works for me. If you like deeper frying, feel free to use more oil.

Take out lumps of potato mixture - a few tablespoons at a time is about right - and shape them into flattened pieces about half an inch thick. Dip them first into the flour and coat them well, then dunk them in the egg to thoroughly slime them, and finally coat them with panko. Fry them in the oil until the panko turns brown, then drain them on the paper towels.

Vegetarian Lorraine Mini Quiches

(makes about 12 muffin-sized pies)

Ingrediants
3 eggs
2-3 Tsp. Greek yoghurt or sourcream
1/3-1/2 zucchini, shredded and drained on a towel
1 cup of grated cheese (anything yellow and tasty)
1 cup of chopped leef or spring onions
1 tsp Dijon mustard
Salt, pepper, thyme to taste
Pie crust (either store bought or home made)

Preheat the oven to 480°F.

Cut the dough of your choice into 6 squares and line the muffin form with the pieces. (Hint: Put some aluminium foil along the edges of the dough to prevent it from shrinking into the moulds.)

Put them in the oven to pre-bake and poof up a little for 5-10 minutes. The dough shouldnĂ­t get brown yet, just a little poofier!

While the crust is baking, mix together the filling ingredients and stir well. Take the baked crusts out of the oven, and spoon 1-2 Tsp. of the mixture into each muffin cups.

Turn down the oven to 400°F for baking the egg mixture. They bake in 10-15 minutes (do a test to see if the egg has solidified completely, by poking in a skewer or the tip of a knife). Take out of oven and cool thoroughly on a wire rack so that no moisture can form underneath and ruin their crispyness.

You can stack them in plastic boxes and freeze them after cooling. They warm in the microwave in just 90 seconds to 2 minutes.

Feta-and-Tomato Mini Quiche

(makes about 6 muffin-sized pies)

125g / 4oz (or more) feta cheese, crumbled
4 pieces of sundried tomato, cut into small pieces
fresh herbs, e.g. thyme, basil, oregano, rosemary
Salt, pepper to taste
Pie crust (either store bought or home made)

Preheat the oven to 480°F.
